Dan and I are in the final stages of our Hawaiian party preparations so I don’t have much time to write today. Last night I made some bite-sized brownies with macadamia nuts that turned out really well (using the Perfect Fudgy Brownies recipe that I posted in May) and some coconut macaroons (using this recipe) that just turned out fair. Better than my first attempt at macaroons, but still not quite what I was hoping for. This morning I got up early to buy a pork roast (the largest one I could find at our local store) and put it into the Crockpot in enough time to have kalua pork ready for the party tonight. Then I took a long walk to the beach and back. I was worried that I wasn’t going to be able to get any exercise today, but since Dan was still sleeping when I was was done prepping the pork roast I didn’t feel too guilty leaving the house for three hours to take a walk. When I got back he was getting the house ready for the party. Right now I’m getting a pineapple upside down cake ready to go into the oven. I’ve make this cake before, namely as my first new recipe of 2011, so I already know it’s going to be delicious. I’d better get going so I won’t still be working when our guests start to arrive. I have a feeling this is going to be a crazy party!
